Carrot Beans Dry Sabji

Hello viewers welcome back to prathus food. Today I came up with very basic curry recipe tastes best with rice / roti with very minimal ingredients. 
        Beans is the vegetable which goes well with any vegetable, it mingles with any vegetable, wish human beings too mingle with others like beans. I cook beans coconut, aloo beans, tomato, beans, mixed vegetable, use in almost all biryanis, pulao's, fried rice. So, I make sure that atleast 100 gms of beans must be in stock for handy. 
        Though we cook huge number of recipes, but still we crave for new recipes, new versions of vegetable curries, in search of that I got this new variety (atleast for me). We get this curry mostly when order South Indian Meals, I like simple flavors and enjoy with rice or roti. Today I thought to give try as curries play most important role in my family's lunch especially dry curries in Sunday for my full meal menu plan on Sunday's. Let's jump to recipe.





Ingredients:

  • Chopped carrot          - 1 cup
  • Chopped Beans          - 1 cup
  • Fresh grated Coconut  - 2 Tblspns 
  • Turmeric Powder         - 1 tspn
  • Salt                              - according to taste
  • Red Chilli Powder      - according to taste
  • Oil                              - 1 Tblspn
  • mustard seeds             - 1 tspn
  • Spilt Urad Dal            - 1 tspn
  • Jeera                           - 1 tspn
  • Hing                           - Big Pinch
  • Curry Leaves             - 5 

Note: if fresh coconut is not available soak dry / dessicated coconut in milk to get almost same taste like fresh one.  But I strongly recommend fresh coconut.

Method:

  1. Heat Kadai, add oil
  2. Add mustard seeds saute till it splutters, now add urad, jeera, hing, curry leaves.
  3. Now add carrot, beans mix well and close it with water filled lid, this allows vegetables not to burn or not to over cook .. mostly by adding water and allowing to boil vegetable looses it's flavor little bit and may be chances of overcooking too. Always prefer to cook vegetables like this to lock taste and flavors.
  4. Cook inlow to medium flame for 15 mins, check if cooked soft or else cook for some more time.
  5. Now add turmeric, salt, red chilli powder, coconut mix well and cook for 5 more minutes.
  6. Switch off stove and serve hot with roti's /rice.
