Methi Palak Paratha

This recipe is all in one recipe for healthy weight loss meal, quick lunch box, light dinner, picky eater kids. let's jump to recipe.

Ingredients:

  • Palak leaves                 - Finely Chopped (1/2 Cup)
  • Methi Leaves               - Finely Chopped (1/4 Cup)
  • Green Chilli Paste       - 1 Tblspn (adjust)
  • Wheat Flour                - 2 Cups
  • Turemric                      - 1 tspn
  • Jeera                             - 1 Tblspn
  • Ajwain / Carrom seeds - 1 tspn
  • Salt                                - according to taste
  • Oil                                 - 4 Tblspns
  • Water                             - as needed


Method:

Heat kadai, 1 tspn oil.


Add chopped palak leaves and methi leaves, saute till raw smell vanishes, keep it a side (this step is to ensure parathas don't turn bitter due to raw methi laeves.


Take a wide opened bowl, add wheat flour, turmeric, jeera, ajwain, salt, green chilli paste, sauted leaves, 1 Tblspn oil , mix well to blend all ingredients.


Gradually add water, knead into soft dough like regular chapathis.
Let it sit for 15 mins.


Take the dough, divide dough into 8 equal balls to roll into circular shape.


First roll into small circle, brush it with little oil and fold into half


Again with oil, fold


Now roll into circular shape.
weight watchers can roll like pulka, this step is to ensure parathas are soft and layery.

Now heat Pan and drop paratha, cook for 2 seconds, flip , when roti starts bubbling apply  oil.

Flip other side and apply oil, cook for 2 seconds and plate it outmake sure that it must be high flame and roti must be flipped only 3 times, this makes soft rotis and stays soft and fresh for whole day.

Serve hot with curd and chutney.
