Today I am posting very basic yet heavenly methi tomato dal, usually we cook methi dal but adding small amount of tomato just for flavor takes this dal to other level I can say. I add methi leaves at a time to cook with dal to get good mix of leaves with dal, but who are concerned about nutrients can saute leaves while making dal process adding little bit of jaggary makes dal little sweet as I born in Brahmin's Family we use jaggary in few curries, little bit in all dals. trust me dish never turns sweeter but that small jaggary will do some magic with flavors. Make sure that all flavors must be mild in this dal for perfect taste. why late let's jump to recipe.

Ingredients:
- Tur Dal - 1 cup
- Methi Leaves - 1/2 Cup chopped
- Tomato - only Half ( use 1 if very small)
- Green Chillies -2
- Tamarind - small lemon sized ball
- Salt - according to taste (appr 1 Tblspn)
- Red Chilli Powder - according to taste(appr 1 Tblspn)
- Jaggary - 1 to 2 Tblspn(optional)
- I recommend adding atleast peanut size so that it will not taste sweet but enhances flavor.
Tadka:
Oil - 1 Tblspn
Mustard seeds - 1 tspn
Split Urad dal - 1 tspn
Jeera - 1 Tblspn
Hing - 1 big pinch
Curry Leaves - 1 strand
Method:
- Pressure cook dal, green chillies, methi leaves, tomatoes for 3 whistles (if concerned about nutrients of methi leaves can add methi leaves in further process)
- Mean while soak tamarind.
- Heat a kadi, add Tamarind pulp, add salt, red chilli powder, jaggary.
- Bring it to boil, add cooked dal.
- let it cook for 15 mins on low flame.
- Add water or skip according to preferred consistency.
- Keep it a side.
- Heat Kadai, add mustard seeds, saute till seeds splutter, now add urad dal, Jeera, hing, curry leaves. Fry for a minute.
- Add pipimg hot tadka to dal and close it with lid to lock all flavours.
